We designed a menu to revolutionise the future of airport food: healthy fast food. A quick energy boost for weary travellers? Nourishing dishes before take-off? Fresh juices to help jet lag? When creating it, we kept in mind the different nationalities, needs and profiles of passengers – across morning, noon and night. And designed a truly cultural space where different people, worlds and cuisines converge. Operational efficiency and speed of service were also key.
